You will lead and inspire a kitchen team of 6-7 people, in our Drumanilra Farm Kitchen, restaurant and farm shop, in Strandhill, Co. Sligo.  You’ll work with your team to create award-winning and commercially successful menus suited to the location, using local, organic ingredients from our organic farm and from our partner producers.  Working within the guidelines of our mission and goals, you will prepare food, for eating-in and take away, that is beautifully presented, tasty, nutritious and with an accessible, broad appeal.  You’ll have a proven customer service focus. You’ll be based at the Drumanilra Farm Kitchen, Strandhill, in Co. Sligo, a family friendly licenced restaurant and farm shop, in a high profile location on the Wild Atlantic Way.  The restaurant is much anticipated locally and will feature strongly in Wild Atlantic Way dining experiences promoted by Failte Ireland.

The comfortable and stylish shop-fit incorporates wood burning fires and views over the popular surfing and walking beach to the mountains of Sligo Bay beyond.   It includes a 100 seater restaurant, a covered out-door dining area and a take-away coffee, juice, salad, deli and bakery bar, together with a small farm shop retail section.   You and your kitchen team will work closely with a highly experienced, Front of House team, to achieve excellent customer service which consistently exceeds visitor expectations.

Drumanilra Farm Kitchen, Strandhill, is the first of two restaurants and farm shops opening in the North West, over the next 8 months.  A third will open in Boyle in 2021.  Visitors to the restaurants will be encouraged to  visit our organic farm, a 35 minute drive from Strandhill, to see at first hand, the provenance of the food you prepare.  The kitchen teams in each location will work closely together to develop menus consistent across the Drumanilra brand, whilst being adapted to the requirements of each individual location.  You’ll work closely with our own in-house organic baker and organic butcher, based in Boyle, to develop recipes for the products you require, including organic breads, patisserie, and our hand-made burgers and sausages.

You’ll have the support of a senior team including Head of Operations for the three sites, a HR and Business Systems Manager, our Farm Manager (your key supplier), and the Finance and Marketing teams.

You’ll be joining us at the start of this new venture in Strandhill, which builds on the success of our popular, award-winning, Boyle based, Drumanilra Farm Kitchen. With the assistance of our HR Manager, you’ll recruit and train in a 6-7 person kitchen team.  Working closely with the Head of Operations, you’ll help finalise the optimum design and equipment spec for the newly fitted kitchen.  You’ll develop and deliver our ethical carnivore, sustainable seafood, vegetarian, vegan, free-from and “organic kids” dining-in menu, together with a take-away menu and salad bar.

We’re about simple food made with fantastic ingredients.  Your passion for good food, your creativity and flair, will help us achieve a commercially successful, seasonal menu.  The simple menu will properly show-case the amazing ingredients we source and produce, in a way which is accessible and has broad appeal.

Once open, you’ll work closely with an experienced Front of House team to deliver exceptional customer service which consistently exceeds visitor expectations.  You’ll seek out and listen to customer feedback and create a culture where all feedback (both positive and negative) is welcomed as an opportunity for the business to learn and grow.  You’ll have a strong commercial focus and an eye for margin, cost control, and waste management.  With the support of the finance team, you’ll work within budget and achieve financial targets.

You’ll have a strong systems focus and proven experience in managing a kitchen that maintains the highest levels of hygiene, food safety and food allergen management.  You’ll have a good understanding of HACCP  processes and help set up a robust food safety management system.  With training, you’ll help us implement our sustainable business goals in the kitchen, including minimising food waste, minimising single-use plastic, recycling, composting food and packaging waste, and sourcing ingredients sustainably.

You’ll work with the HR Manager, to ensure everyone in your team has the necessary training and is compliant with relevant legislation including food hygiene and HACCP procedures.  You’ll motivate and inspire your team to strive for a culture of exceptional service and make it a great place to work.

With your passion for food, excellent people management skills and commercial focus, you’ll lead your team to deliver exceptional customer service, a commercially successful menu and fantastic food on the plate.

You need to have:

  • A passion for good food and a commitment to using ingredients which comply with our food philosophy;
  • A third level professional qualification in culinary arts or similar;
  • At least three years’ experience working in a senior chef position;
  • Kitchen management experience;
  • Proven track record in delivering customer service excellence;
  • Track record of delivering challenging performance targets and improving results;
  • Evidence of ability in recruiting, coaching and developing others, and achieving team engagement and satisfaction;
  • Commitment to creating a diverse and inclusive work-place and an environment free of bullying, harassment and discrimination;
  • Good written and verbal communication skills. IT literacy;
  • An excellent knowledge of Food Safety and Health & Safety compliance requirements and up to date certs.
